24 Hours in Mexico City

After being in Chiapas for about five days, we headed out to explore Mexico City. This was a total last minute plan as our original plan to see Puebla got changed because our flight was cancelled. It was a bit annoying but Mexico City ended up being more charming than what I was expecting. Lunch at Belmondo Since we got in really late the night before (3 a.m.), we started the next day a little later than we hoped and went straight to lunch. After having Mexican food every day for nearly a week, I needed a burger. And this burger did not disappoint! It was very juicy and delicious. The restaurant also had a choice of bowls that were really fresh and tasty. To be a little different (I usually order water), I got a matcha mint lemonade which was surprisingly good and refreshing! Chiapas, Mexico Part II

So now that you know all the amazing places you can dine at while visiting Chiapas Mexico (specifically San Cristobal de las Casas), it’s time to share all the beautiful places we saw during our visit. Scenes Around San Cristobal de las Casas First of all, the city itself is so beautiful! Cobblestone roads and colorful architecture adorned in florals and greens. A very picturesque city situated in the mountains. It was a lot more artsy than I was expecting! What a neat storefront idea, hanging wine bottles! Chiapas, Mexico Part I

My niece and I arrived in Chiapas on a Friday evening. It was such a long journey! We took three flights starting from Baltimore. Although it was long, it was worth it the moment I began to see where we would be landing. Out of the airplane window I started to see lush green land and mountains and I was already in awe of all the beauty in front of me. We were picked up by the Humanity First Guatemala Team* from the Tuxtala Airport which was about an hour drive from San Cristobal De Las Casas, our final desitnation. San Cristobal is located in the Central Highlands region of Mexico in the state of Chiapas which makes for some interesting weather conditions. Jalapeno Bean Dip

I LOVE dips so today I am sharing a recipe that I kind of made up by looking at various other bean dips. I took it to a recent BBQ party that we had on one of those rare days the weather was above 40 degrees. We are desperate for warmth out here in the east coast! With summer around the corner (I HOPE!), this is a great recipe to add to your backyard parties! Ingredients -One 16 oz. can kidney beans-2 tbs olive oil-2-3 jalapenos, finely chopped (preferably, unseeded if you like the heat)-1/2 onion, finely chopped-3-4 garlic cloves, finely shopped-8 oz. packaged cream cheese, room temperature-3/4 cup sour cream-1 cup shredded cheese (Mexican mix)-1 package taco seasoning-4-5 green onions, chopped (for garnish)-handful fresh cilantro, chopped (for garnish) Instructions 1. Outer Banks, North Carolina

My friend F and I booked a trip to Outer Banks, North Carolina a couple of weekends ago in the hopes of getting away from the cold. Now, I know that it was going to be a hit or miss and it wouldn’t be that much warmer than Harrisburg or D.C., but we still decided to give it a shot. Of course, the forecast called for overcast and rain 70% of the time but we made the most of it. What made our stay great was picking a really nice AirBnb.
