Creamy Pesto Pasta With Chicken & Roasted Tomatoes

Time for another recipe! This one’s a pasta dish that I came up with by combining a few ones that I read online. A few weeks ago I made basil pesto which I had frozen because I made a lot and so I wanted to incorporate that in the pasta. I also wanted to include tomatoes in it because my dad grows a lot of vegetables in our backyard and if you know anything about growing tomatoes, they always grow in abundance and so I’m always looking at different ways to use them. I didn’t want to make this pasta taste like a salad because pesto pastas that I have eaten in the past are salad-y tasting and served cold. An Evening in Annapolis, MD

Another city I had the opportunity to visit this summer was Annapolis which is the capital of the state of Maryland. I lived in Silver Spring, MD for 9 years and I never made it out here before! So I decided it was about time that I went since I visit my siblings in the east coast all the time anyway. It is such a cute town and fun to walk around in. Our goal was to go inside the State House first thing but we didn’t make it in time to do that which is okay because I can always go back another time (hopefully). Easy Cheesy Veggie Quesadillas

My first recipe, yay! Let’s see if I can manage to write out the measurements and instructions properly because I usually end up putting a little bit of this and a little bit of that and just eye ball things when I’m cooking. I’m going to share this very simple recipe because it was one of the first things I learned to make as a kid, when I was still a FOB (fresh off the boat).
