My Thanksgiving

So I finally got a chance to sit down and write this post about my Thanksgiving. I know I am late but I had a busy and amazing weekend full of lots of food, fun and laughter with the family. My sister and I were hosting the big dinner at her house for ~15 people and I was tasked to make the turkey. I had done it twice before but still was nervous. I had only ever done it by brining it and that’s exactly how I did it the third time as well. Although my sole responsibility was to not screw up the turkey, I couldn’t help myself and make a couple of other things too. I tried a new dip (I LOVE chips and dip). Lemon Ricotta Donuts

I discovered this fried goodness last winter when my sister sent me a video recipe to try out. Winter is my time to hibernate and experiment with food so I tried it the next day! I couldn’t find the original recipe I tried but here is one that is from another blog , Bread, Booze and Bacon that seems close enough.  Ingredients: -1 cup ricotta cheese -2 eggs -3/4 cup flour -2 tsp baking powder -1 tsp grated lemon zest -1/4 tsp salt -3 tbs sugar -1 1/2 tsp vanilla -Oil for frying -powder sugar for dusting  Instructions: 1. Heat oil in a medium pot, over medium heat 2. Set out a plate with a paper towel. 3. In a large bowl, mix ricotta, vanilla, sugar, and eggs. Cheesy Pull-Apart Bread

It has been a while since I posted a recipe so I think it was about time! This is literally the easiest and delicious side to any meal! Also, with football season back in full swing, this would be a great game day recipe to make along with some of my nachos! Ingredients: -1 Italian loaf -2 packages of mozzarella cheese slices -3-4 green onions, roughly chopped -1 stick butter at room temperature -2-3 garlic cloves, finely chopped -1/2 tsp oregano -1/4 tsp thyme Instructions: 1. Preheat the oven to 375°F. 2. Finely chop garlic and mix it together with butter, oregano and thyme. Roughly chop green onions and set aside. 3. Cut the bread in strips, being careful not to cut all the way through the loaf. Rotate the bread, and cut in strips in the opposite direction. 4. The Ultimate Nachos

Today is the day that I post a recipe that all my friends go crazy over and my mom gets cravings for! It’s super easy and once again very versatile. I make it a lot, especially when we do parties. Ingredients: -1lb ground beef -1tbs oil -1 onion, chopped -2 garlic cloves minced -1 1oz. taco seasoning package -queso cheese dip (I get this one) -1 1/2 cup shredded Mexican blend cheese -tortilla chips (these are my all time FAVORITE tortilla chips!!) -1 avocado chopped -2 tomatoes -handful sprigs of cilantro, chopped -1-2 tbs lime juice -salt & pepper to taste Instructions: 1. Blueberry & Mascarpone Cream Trifle

One of my all time favorite things is mascarpone cheese! IT’S SO GOOD!! I came across it when I had tiramisu for the first time ever and looked up how to make it. (Recipe for another day.) This recipe is so easy and delicious and is the last one I’ll be sharing from that Tea Party from February! Ingredients: -1 pint whipping cream -4 oz. Mascarpone cheese -1/2 cup confectioners sugar -1 packet of sponge cake dessert shells (I use these from Walmart) -1 cup or more blueberries -small trifle cups (I made them in these plastic cups for a super easy cleanup) Instructions: 1. Whip the cream in a bowl just until it starts thickening up a bit. Then, add the mascarpone cheese. Add sugar slowly and whip until it becomes creamy. Egg Salad Sandwiches

This is a continuation of recipes from the tea party I did a couple of months ago. I learned how to make egg salad sandwiches very early on in my life. I picked this recipe up from my aunt who taught us how to make them at summer camp. I always remembered eating hers and loving the taste. And when she showed us exactly how to make them, I couldn’t believe how easy they were! Ingredients: -5 hard boiled eggs -1/4 cup mayonnaise -1 medium sized cucumber, chopped (I prefer the Persian ones) -1/2 tsp paprika -salt & pepper to taste -bread of choice -extra cucumber slices for garnish (optional) Instructions: 1. Combine eggs, mayonnaise, cucumber, paprika, salt and pepper in a mixing bowl. 2.Serve between slices of bread that you can either cut in half or like I did in cute little four squares. Brownie Truffles

I made these truffles for the tea party I did a few weeks ago. They are super easy and only require a few ingredients        Ingredients -Brownie Fudge Mix (it’s important they are FUDGE brownies) -2 cups Chocolate Chips -1 cup White Chocolate Chips (optional) Instructions 1. Bake brownies according to the instructions on the box. 2. After they are cool, take a fork and crumble them. 3. At this point you will be able to pick a tablespoon worth and roll it into balls and place them on a tray lined with parchment paper. (Make as many as you can. Mine yielded about 18) 4. Freeze them for an hour, until firm. 5. Melt the chocolate chips over a double boiler and dip the brownie balls into it. Use a spoon to make sure it’s fully covered. Philly Cheesesteak Puff Pastry

On Super Bowl Sunday, a couple of weeks ago, we had a party and I tried my hand at something new. I’ve been seeing puff pastry dough and crescent roll dough being used in so many cool appetizers that I knew I had to make something utilizing them too. For that day, I chose puff pastry and decided to stuff it with cheese, steak, onions and bell peppers.     Ingredients: -2 sheet of puff pastry dough -2 packs of sliced provolone cheese -1 lb rib eye steak (or flank steak) -1 onion -1 bell pepper -1 tsp salt -1 tsp garlic powder -1 tsp paprika -1 tsp onion powder -1 garlic clove, minced -1 cup shredded cheese (cheddar or a mixture) -1 beaten egg -1 tsp sriracha (optional) Instructions: 1. Delicious Loaded Lasagna

Today, I am going to share a recipe that I learned from a friend and then made it my own (much like I do with most of my recipes). One of the main difference in this lasagna and a traditional lasagna is the use of Alfredo sauce and cream cheese. Basically, it’s loaded with a ton of flavor and a few cheeses along with ground beef and spinach! I’ve made it plenty of times and have gotten several compliments from friends. They are always asking me for the recipe so I thought it was about time I wrote it out and put it up for everyone to see!
